I finally got around to reading the comments left on my blog... so below are I guess Q&A time :P
My night of cooking for friends....
The pumpkin/potato/sweet potato soup...
No recipe as such, I just fried some bacon, and onions. Took it out of the pan. Put some chicken stock into the soup... Just enough to cover the cut pumpkin/potato/sweet potato (as much as you like of these ingredients)
Electric blender, to blend all the soft pumpkin/potato/sweet potato.
Then add more chicken stock and add the bacon and onion...
Viola... beautiful healthy and yummy soup.
Chicken and Mushroom Risotto
For this I kinda used a recipe off the net and added my own flavour to it.
Cooked chicken first, then onions and garlic.
Next goes the special risotto rice, with chicken broth... kept simmering and cooking until the rice is cooked.
Add chicken, onion, garlic, mushroom and some grated parmasen cheese to the mix.
Another healthy meal sorted.
Lemon Meringue Biscuit Base Pie
Ingredients
185 g Nice biscuits
400g condensed milk
1 grated lemon ring
1/2 cup castor sugar
90g butter, melted
1/2 cup lemon juice
3 lightly beaten egg yolks
3 egg whites
Methods
Crumb biscuits, melt butter, and combine. Press into a greased pie plate, then chill.
Place condensed milk into a bowl, add lemon juice and grated rind, mix well.
Add 3 egg yolks, mix well and then spoon into chilled crumb crust.
Beat egg whites until stiff; gradually adding castor sugar as you beat.
Spoon meringue on top of the creamy filling.
Bake in a moderate oven 180C for 15 minutes or until golden.

Finally, it is rather strange for me to write two blogs in one day. But I just thought I would reflect on something that I learnt yesterday. I was stuck in traffic yesterday on Epping Rd at 4:30pm. I bascially didn't move from my spot for 1hr. What had happened just 10-15m infront of me was disasterous, even though I did not see the accident. We were in grid lock and I figured it was just afternoon traffic, but when the ambulance turned up 15 mins later.... one could tell something was very very wrong. Espeically when more ambulances and about 5 police cars turned up. Then the RTA traffic directors turned up as well. Found out later on, when police finally started to clear up the built up traffic 1hr later that there had been a motorcycle accident. We were told by the RTA guys that the motocyclist was "sprawled on the road and it's not a pretty sight". At the time, I was pretty annoyed with things, I guess it was because I was only 5m away from the ramp to go up to work, but instead I was no closer to the work ramp 1 hr later. So I guess what was more annoying was that I had the parents waiting for me at work for like 2.5hrs, so it meant we missed out on shopping for some groceries, and just got me generally annoyed.
Our family ended up going out for dinner, and then afterwards visited my uncle's family, just to say hi and stuff. All in all, it wasn't really that bad of a night. When I arrived home though, that was when the real surprised happened. Someone knew about the crappy day I was having and wanted to give me a hug and some chocolates just to de-stress me. But because it was a surprise they didn't want to ruin it by ringing me up and asking "hey are you gona head home anytime soon". So instead, they waited outside my house for 2hrs. You are the best, and it just lit up my night, in fact it lit up my whole entire day/week/month. Thank you for bringing your ray of sunshine :)
